I opened this to accompany grilled squid and Florida rock shrimp this weekend. If you like lean, mean Chablis, this will be for you. Very vervy wine that beckons with citrus and astounding minerality. As I usually do, I followed this over the course of a few nights, and it just keeps getting better. As much as I liked it on day one, it has mellowed out substantially and come together better with more air. For $27, this was a great buy in my book.
