Opened a day in advance and stored re-corked in the cellar. Deep, opaque ruby red and purple color. Nose is of raw beef and lardon with some cracked pepper and blueberry. On the palate, it's a very velvety texture with lots of black and blueberry fruit underlined by a little vanilla and black pepper. Finishes very long. Overall, this reminds me a little of 2003 St. Joseph in that it's very ripe, yet not overblown. As this keeps losing its baby fat, I expect great things from this wine. Certainly should not be touched for 5+ years in my opinion.
